Spring is here! I’m writing this letter in the sunshine on my back patio, and it feels like it is 70 degrees. I love this time of year, when life renews and the bounty returns to the Pacific Northwest.
What do I get excited about this time of year? Halibut season has begun and our chefs are offering killer preparations on our menus; we’re also looking forward to the Alaska King Salmon runs, which start in April. Yakima asparagus harvest starts next week, which signals the start of our team buying locally grown produce all the way through fall.
This is also a time of renewal for our business, as we just finished remodeling our cigar and private dining rooms in Portland; new carpets have been laid in Tacoma, with Bellevue’s new carpets on order; and AQUA’s patio will be updated with wind guards and new tables in time for outdoor summer dining. Our flagship location, El Gaucho Seattle, received updates last year and we are in the planning phase of adding additional stories onto the Inn at El Gaucho. We are planning to include a rooftop patio for our guests and private parties to enjoy in every season.
We are blessed to live in this spectacular region, and look forward to sharing the bounty with you.
