General Manager, El Gaucho Boise

Sean Sweat joined El Gaucho in November 2025 as Captain for the opening of El Gaucho Idaho, drawn by a level of hospitality and leadership he describes as unlike anything else in the Treasure Valley. He was promoted to General Manager in September 2026. Prior to joining El Gaucho, Sean spent five years with the Torro Restaurant Group, where he helped the company grow from a single restaurant to six. As AGM at Barbacoa, he also helped manage Coa de Jima and Coa del Mar and oversaw the transition of Flatbread into Nick’s Italian. Sean is looking forward to growing with El Gaucho for many years to come.

Born and raised in San Diego, Sean spent his college years at the University of Washington, where he played in the 2001 Rose Bowl on a Huskies team that took down Drew Brees and Purdue, still one of his proudest moments. These days, his biggest source of pride is closer to home: his wife, Corinne, their three children, and, as of December 2024, their first grandchild. Around the team, Sean is known for his positivity and his readiness to hit the dance floor the moment the music starts. In his downtime, he cooks, golfs, and follows fantasy football (podcasts included, year-round). His outlook is best summed up in his own words: don’t worry, be happy.

Executive Chef, El Gaucho Boise

A Bellevue native, Ian has been with Fire & Vine Hospitality since the opening of Walla Walla Steak Co. Woodinville.

He previously ran a successful catering company with his wife, and his passion for food, spirits, and nature shines through in every dish he creates.
