Even if it doesn’t feel like it quite yet here in the Pacific Northwest, spring has sprung in the kitchens at El Gaucho! Our culinary team has been hard at work preparing seasonal delights to brighten up our menus and welcome the new season with open arms. Starting April 4th, El Gaucho and AQUA menus will highlight local, organic produce with a few new fresh dishes to help us move past the winter doldrums.
Nothing says spring like lamb and lavender. El Gaucho Tacoma’s Executive Chef Jesus de Boites created a great starter dish – lamb lollipops with a lavender demi-glace. This delicious preparation is aesthetically pleasing as it is to eat. We recommend pairing it with the 2014 Willakenzie Estate Gisèle Pinot Noir. The juicy acidity and dark fruits from the wine brings out the flavors of the lamb.
We have updated the traditional spring lamb preparation to Lamb T-Bone with a Sriracha honey aioli. This dish from El Gaucho Portland’s Executive Chef Steve Cain uses our popular sticky rib sauce, and the combination with honey and spice aioli is like throwing a party for your taste buds! The Spring Valley Vineyard Frederick Cabernet Sauvignon blend makes for a classic match with Lamb T-Bone.
If lamb isn’t your jam, then check out the rainbow carrot side dish to pair with any entrée. Because we love our fire, the carrots are grilled and finished with a lemon thyme glaze drizzled on top. Eat fresh!
Of course, you must save room for dessert – and you won’t want to miss this one. The lemon cake with blackberry sauce and almond lace cookies is a perfect way to leave on a lighter and airy note. There’s a secret ingredient that gives every lemony bite its intensity (can you guess what it is?). The blackberry sauce paired with the lemon is a classic combo, but the crunch from the almond cookies creates a texturally satiating experience. We recommend this with a glass of Dolce, from Napa Valley.
