Niman Ranch Pork Tomahawk Recipe

Looking for the perfect recipe to serve for the holidays? Our Pork Tomahawk is sure to delight everyone at your holiday table.  The Bing Cherry Amaretto glaze coupled with the Brussels sprouts create a festive treat for the eyes – and the belly.

14 oz tomahawk pork
3 fl oz Cherry-Amaretto Glaze Sauce, warm (see recipe)
1 tbl El Gaucho Seasoning*
4 ounces Brussels sprouts, trimmed and halved
½ tbl White Balsamic Dressing

1. Season the tomahawk with gaucho seasoning and grill to a true medium
2. When the tomahawk is almost done, fire the Brussels sprouts at 350 degrees until they are crispy on the outside and tender on the inside
3. Toss the Brussels sprouts with Gaucho Seasoning* and white balsamic dressing
4. Top with Bing cherry-amaretto glaze

Cherry Amaretto Glaze

1 ¼ lbs Bing Cherries, thawed
1/2 cup amaretto liquor
¼ tsp kosher salt
¼ cup Dijon mustard
¾ cup granulated sugar
¾ cup maple syrup
3 tsp cornstarch
3 tsp water

1. Place half of the cherries in a blender. Pulse 5 times.
2. Transfer to a pot and repeat with the remaining cherries.
3. Add the amaretto, salt, Dijon, sugar and maple syrup
4. Bring to a boil
5. Meanwhile, mix the cornstarch with the cold water
6. Add the slurry to the cherry mixture and simmer for 5 minutes
7. Check the viscosity (thick enough to coat the back of a spoon) and chill
